Dok ste ispijali kavu jednog lijenog poslijepodneva, jeste li ikada razmišljali o tome odakle dolazi kava? Zelena zrna kave izvor su svih onih vrsta kave koje volite. Brazil je i dalje najveći izvoznik kave, iako je tržište zelene kave nedavno preplavljeno velikom količinom zrna Robuste iz Vijetnama. Zbog neizravnog pritiska Svjetske banke na francusku vladu, stručnjaci smatraju da je priliv jeftine zelene kave rezultat krize cijena koja je započela 2001. godine, a traje i danas. Robusta kave, kojima se u Londonu trgovalo po nižoj cijeni u odnosu na njujoršku Arabicu, izbor su velikih industrijskih klijenata koji se sastoje od multinacionalnih pržionica i proizvođača instant kave; favoriziraju ove kave zbog jeftinije cijene. Rijetka i skupa sorta Robuste je indonezijski Kopi Luwak i filipinski Kape Alamid. Zrna kave skupljaju se iz izmeta palme civetke, probavnog procesa koji joj daje prepoznatljiv okus. Kada se prži, zrno zelene kave se gotovo udvostruči od svoje izvorne veličine i mijenja boju i gustoću. Kako grah upija toplinu, njegova se boja prvo mijenja u žutu, a zatim u svijetlo smeđu cimet. U ovoj fazi, grah izbacuje vlagu, a kad dosegne 400 stupnjeva Fahrenheita, postaje smeđi i iz njegove unutrašnjosti se oslobađa ulje. Ovo ulje kavi daje poseban okus. Što je veća količina ulja koja se oslobađa, to je jači okus. Zrna kave će popucati tijekom procesa prženja, što usmjerava pržionice o tome kako procijeniti napredak pečenja. Zrno će tada nastaviti izbacivati još ulja dok potamni svoju boju, sve dok se ne makne s vatre.
